In Greece the pepper is grown in almost all of the country in vegetable gardens and greenhouses. It is particularly widespread in Northern Greece. The main varieties are the green of Nea Magnesia with the sweet and lean seeds, Florinis with the red or sweet or hot seeds, medium-sized, roasted, paprika or canned. Yellow Koufalia, Piperoudi, pickled and grown in the areas of Thessaloniki, and others. The dry, grated red pepper in some areas is also known as a capsicum annum or chilli pepper.
HEALTH
Colored peppers, either green, red, orange or yellow, are a rich source of nutrients. They are extremely rich in vitamin C and Vitamin A, two very important antioxidants, and also contain a high concentration of carotenoids. This means they can help neutralize free radicals in the body, causing damage to the cells. So they can help prevent or reduce the symptoms of certain diseases.
The actual nutritional content of the pepper is impressive and is somewhat surprising, given the low fat content of the vegetable in question (some nutrients are fat-soluble and their presence is a prerequisite to contain some fat in the food). There is less than one gram of fat in a cup of chopped peppers. However, this small amount of fat is sufficient to provide a reliable source of fat-soluble nutrients for peppers, including carotenoids and vitamin E.
Peppers are a very good source of vitamin E, about 145 milligrams per cup, and contain more than thirty different carotenoids, including a large amount of B-carotene and zeaxanthin. The two aforementioned carotenoids provide antioxidant and anti-inflammatory action in the body.

NUTRITIONAL VALUE OF DRIED PEPPER
The colored peppers, either green, red, orange or yellow, are a rich source of nutrients. They are extremely rich in Vitamin C and Vitamin A (as is the concentration of carotenoids and B-carotene), two very important antioxidants. Red peppers are a good source of fiber, folic acid, vitamin K and manganese and are particularly rich in nutrients such as Vitamin A, C, B6, Lutein and Zeaxanthin, β-Carotene Lycopene. A quantity equivalent to one cup per day can provide more than 100% of a person’s daily needs.
INSTRUCTIONS FOR USE
